With all the hype about gluten and the way processed breads are made, it’s a good idea to watch out for questionable ingredients in packaged breads. Gluten allergies or sensitivities are on the rise, and there are so many hidden sources of gluten in our food system. Gluten is the protein found in wheat and related grains (barley, rye, some oats etc), and not only does it aggravate those with Celiac disease, but can trigger an inflammatory cascade, disrupt digestion or contribute to leaky gut and bloating in many individuals without Celiac disease. If you’ve been gluten’d before, you know the feeling when your body is not happy after that slice of pizza or office bagel. It is not fun.
Occasionally enjoying wholesome double fermented sourdough from a local bakery is a whole different story than consuming the GMO wheat found in most bread sold in North America. So, if you’re someone who loves to make sandwiches, avocado toast or just love bread and want to keep it in the house, keep reading. This recipe won’t hurt your gut or make you bloated, and most importantly it’s so customizable so it truly is the only gluten free bread recipe you need. If you want to make a cinnamon raisin flavour to use as french toast, do it. If you want a spicy pumpkin loaf for fall, do it. If you want a savoury bread for breakfast or snacks, do it. Any herbs and spices can be used however you wish! I use all organic ingredients, and have been making this bread weekly to make sure I have a steady supply for my avocado toast obsession.
The best part is, it’s loaded with protein, healthy fats and fibre, so it’s an excellent addition to round out a balanced snack or meal! These clean ingredients are all healthy for you, and there are no additives (which are in many store bought gluten free breads). Unlike regular bread, this bread is low glycemic, which means it wont spike your blood sugar and cause weight gain.

Probably the best deal I’ve ever made, and I’m so glad she has shared the recipe with me, and allowed me to share it with all of you! It really is the easiest gluten free bread recipe that makes a delicious bread with the perfect texture! Recipe is below and you probably have all the ingredients in your pantry already!
Recipe: Gluten Free Bread That Actually Tastes Like Bread
- 3 eggs
- ⅔ cup almond butter
- ½ cup coconut flour
- 1 cup almond milk
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp apple cider vinegar
- Spices (optional)
I like to use a little bit of salt, pepper, garlic, cayenne, paprika and oregano. I’ve also made it using rosemary and thyme!
Add all ingredients to a high speed blender and blend for a minute or two until well mixed. Pour into a small loaf pan, greased with coconut oil.
Bake at 350℉ for 35 minutes. Remove and let cool.
Store in an air tight container in the fridge, slice and warm up in the toaster as needed throughout the week!
Note: For higher protein, use 5 eggs and cut down the almond milk.
